For a group running venues across three cities, it is never one dish. It is the same dish on a quiet Tuesday, in a kitchen you are not standing in, made by a team you did not train yourself. The work was to build a standard that travels without flattening what makes each room its own.

The Entourage Group's brands — MOMO, Izakaya, Mr Porter, The Duchess — each with its own kitchen and its own identity.

What we do for them
We are their gastronomic development arm: recipes standardised across every venue, pastry changes implemented in every restaurant, new proposals designed for each brand.
We work with their marketing team on the annual activations, coordinate the photoshoots, and build whatever a venue asks for — mostly pastry, but the bar too: moulds, ice markers, the pieces nobody sells.
Every venue gets its own pack: prep lists, station setup, service notes and plating standards, written so a cook who has never met us can open it and get it right.

Brand by brand, and on opening day
At MOMO and Izakaya, the Japanese side of the group, we built the dessert line and rework it each season. Those two change the least: several of their desserts turned into house favourites, and a favourite is not something you take off a menu.
At The Duchess, the pastry and the afternoon tea. At Mr Porter, the steakhouse. And when a new venue opens, we do not send a document — we move.
For Mr Porter Barcelona and for Mr Porter London that meant living in the city for a month or two: through the build-up, through the opening, and through the weeks after, when a standard either holds or quietly slips. The same when the Ibiza pop-ups came back.
A kitchen can learn a dish in a week. A standard takes longer: it has to be cooked, corrected and cooked again, with someone in the room who knows what it should be.
